One of the most famous melodies from a master of melody - Peter Ilyich Tchaikovsky.  It so epitomizes the feel of the story of Sleeping Beauty that Walt Disney even used it for his animated version, calling it "Once Upon a Dream."  This version for young string orchestra has all the "meat" from the original, with tons of teaching opportunities - F natural alongside F# and C natural alongside C#, hemiolas, legato and staccato bowing, including two slurred staccato upbows, the DS al Coda roadmap and more.  It's "standard rep" with a gorgeous melody for concert and festival and your students will also learn a lot from playing it.
